Ingredients
- 1 14-ounce can Sweetened Condensed Milk (chilled)
- 2 cups Heavy Whipping Cream (very cold)
- 2 teaspoons pure vanilla extract
- 1/2 cup caramel syrup (store-bought or homemade)
Instructions
- Begin by pouring the chilled sweetened condensed milk into a medium-sized mixing bowl. Set aside.
- In a separate, large mixing bowl (preferably chilled, along with your whisk attachment), combine the very cold heavy whipping cream and pure vanilla extract. Using a stand mixer or a hand mixer with the whisk attachment, beat the mixture on high speed until stiff peaks form. This typically takes about 3 minutes. The cream should be thick and hold its shape when the whisk is lifted.
- Take a large scoop (about 1 cup) of the whipped cream and gently fold it into the sweetened condensed milk. This step helps to lighten the condensed milk, making it easier to incorporate the rest of the whipped cream without deflating it too much. Once lightly combined, add the remaining whipped cream to the mixture, folding slowly and carefully until just combined.
- The final consistency should be smooth with a few small bumps of whipped cream, indicating that air has been retained. Be careful not to overmix, as this can remove the essential air from the mixture, resulting in a less creamy ice cream.
