S’mores Treats
Ingredients
- 1 cup miniature semi-sweet chocolate chips
- 6 cups Golden Grahams Cereal
- 6 cups miniature marshmallows divided
- 5 Tablespoons unsalted butter
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
Instructions
- Prepare your ingredients: Place your miniature semi-sweet chocolate chips in the freezer. This step helps them maintain their shape and prevents excessive melting when mixed into the warm marshmallow mixture. Line a 9×13 inch baking pan with aluminum foil, ensuring a slight overhang on the sides for easy removal, and generously spray it with a non-stick cooking spray. This will make removing and cutting the treats much simpler.
- Combine dry ingredients: Lightly spray a large, microwave-safe mixing bowl with non-stick cooking spray. Pour the 6 cups of Golden Grahams Cereal into this bowl. Add 1 cup of the miniature marshmallows to the cereal. Set this mixture aside.
- Melt marshmallows and butter: In a separate large microwave-safe bowl, combine the remaining 5 cups of miniature marshmallows and the 5 tablespoons of butter. Microwave in 20-second intervals, stirring well after each interval, until the mixture is completely melted and smooth. Be careful not to overheat. Once melted, stir in the 1/4 teaspoon of salt and 1 teaspoon of vanilla extract until fully incorporated and smooth.
- Combine wet and dry: Pour the warm marshmallow mixture over the cereal and marshmallow mixture in the first bowl. Gently stir to coat all the cereal and marshmallows evenly. Work quickly but carefully. Once mostly coated, add the frozen chocolate chips and give it one or two quick stirs to incorporate them. Over-stirring at this stage will cause the chocolate chips to melt too much, losing their distinct shape.
- Press and set: Transfer the S’mores mixture into the prepared 9×13 inch baking dish. Using a piece of waxed paper or a buttered spatula, gently press the mixture evenly into the pan. Do not press too firmly, as this can make the bars too dense. Let the treats set at room temperature for at least 1 hour, or until firm. For faster setting, you can place the pan in the refrigerator for about 30 minutes.
- Serve and store: Once set, use the aluminum foil overhang to lift the entire slab of S’mores Treats from the pan. Place it on a cutting board and cut it into desired squares or bars. Store any leftover treats in an airtight container at room temperature. They are best when consumed within a few days to maintain the cereal’s crispness; otherwise, the cereal might start to soften. Enjoy your delightful S’mores Treats!
