  • 1 pound new potatoes halved
  • 12 ounces fresh green beans
  • 2 Tablespoons Olive Oil
  • Salt & Pepper I used about 1/2 teaspoon of each
  • 2 Tablespoons of lemon juice
  • 2 teaspoons Dijon mustard
  • 1 Tablespoon dried parsley flakes
  • 1/2 Tablespoon dill

Instructions

  • Preheat oven to 425 degrees F (220 C) and cover a sheet pan with a silicone baking mat or parchment paper.
  • Place potatoes in a plastic bag or a bowl and drizzle with olive oil, then sprinkle with salt and pepper. Toss to coat completely.
  • Transfer the seasoned potatoes to the baking sheet and place in the oven for 15 minutes.
  • In a small bowl, combine lemon juice, Dijon mustard, parsley, and dill. Whisk until well blended.
  • Remove the baking sheet after 15 minutes. Add the green beans to the sheet, combining them with the potatoes. Push the vegetables to the outer edges of the sheet pan and place the salmon fillets (skin side down if there is skin) in the center. Brush the salmon generously with the prepared lemon-herb mixture.
