Ingredients

  • 1 cup (2 sticks) butter, softened
  • 1/4 cup powdered sugar
  • 1/2 cup granulated sugar
  • 1/8 teaspoon salt
  • 1 1/2 teaspoons vanilla extract (or almond)
  • 1 Tablespoon cornstarch
  • 2 1/4 cups all-purpose flour
  • Lime green food coloring (until you like the color)
  • 1/4 cup + 2 Tablespoons Sweets & Treats “Mean One” Sprinkles

Instructions

  1. Line an 8×12 cookie sheet with parchment paper and set aside. Line one standard-sized cookie sheet the same way. Set aside.
  2. In your mixer, cream together butter and both sugars until light and fluffy.
  3. Add in salt and vanilla extract, mix until well combined.
  4. Mix in the cornstarch, then gradually add the all-purpose flour until just combined. Be careful not to overmix.
  5. Add lime green food coloring, a few drops at a time, mixing until you achieve your desired Grinch green shade.
  6. Gently fold in 1/4 cup of the sprinkles by hand with a rubber spatula. Avoid overmixing the dough at this stage, as it can cause the sprinkles to break and streak the dough.
  7. Evenly press the shortbread dough into the bottom of the prepared 8×12 cookie sheet.
  8. Sprinkle the remaining 2 tablespoons of sprinkles over the top of the pressed dough and gently press them into the surface.
  9. Refrigerate the dough for at least 30 minutes to allow it to firm up. This step is crucial for achieving the perfect shortbread texture and for easier cutting.
  10. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  11. Once chilled, remove the dough from the refrigerator and cut it into 1-inch squares. Carefully transfer the squares to the second prepared cookie sheet, ensuring they are spread out and not touching each other to allow for even baking.
  12. Bake for 7-9 minutes. It’s essential to watch them closely; the goal is to bake them just until they are set and lightly golden at the edges, preventing them from browning too much, which can diminish the vibrant Grinch green color.
  13. Allow the cookies to cool completely on the baking sheet before transferring them. Once cool, store them in an airtight container to maintain their freshness.
