Ingredients

For the Crust:

  • 1 11 ounce box Vanilla Wafers, crushed
  • 1/4 cup brown sugar
  • 1/3 cup butter melted
  • 1/2 teaspoon coffee extract
  • 1/4 cup cocoa powder

For the Filling:

  • 3 8 ounce packages cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 4 eggs slightly beaten
  • 2 Tablespoons instant coffee dissolved in 2 Tablespoons milk if you want a stronger coffee flavor add more coffee to taste
  • 1 teaspoon vanilla
  • 1/2 cup See’s Cafe Latte Chocolates roughly chopped

For the Topping:

  • 1 1/2 cups sour cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 1 cup See’s Candies Coffee Latte Chocolates roughly chopped

Instructions

  • To prepare the crust: Preheat oven to 350 degrees F (175 C). Grease the bottom and side of a 9″ springform pan. Using your food processor, turn vanilla wafers into fine crumbs. Place crumbs in a bowl, then add brown sugar, cocoa powder, melted butter, and coffee extract. Combine thoroughly with a fork until all crumbs are moistened. Press the mixture firmly into the bottom and about 2 inches up the sides of the prepared springform pan. Bake for 7 minutes. Remove from oven and set aside to cool while you prepare the filling.
  • To prepare the filling: In a large mixing bowl, using an electric mixer, beat the softened cream cheese and sugar together until the mixture is smooth and creamy, with no lumps. Mix in the sour cream, vanilla extract, and the dissolved coffee mixture (instant coffee dissolved in milk) until everything is well combined and smooth. Be sure not to overmix. Gently mix in the slightly beaten eggs until just blended. Finally, carefully fold in the roughly chopped See’s Cafe Latte Candies. Pour the filling evenly into the pre-baked and cooled crust. Bake for 55-60 minutes, or until the edges are set and the center is almost set but still has a slight jiggle. Cool for 10 minutes, then carefully run a thin knife around the edge of the pan to prevent cracking as it cools further. Loosen the cheesecake from the springform pan sides. Place the cheesecake in the refrigerator to chill for at least a couple of hours, or preferably overnight, to allow it to fully set.
  • To prepare the topping: In a small bowl, combine the sour cream, sugar, and vanilla extract. Whisk until smooth. Spread this sweet sour cream topping evenly over the top of the completely cooled and chilled cheesecake. Finish by generously sprinkling with the remaining chopped See’s Candies Coffee Latte Chocolates for an extra touch of flavor and elegance.
