- Salt & Freshly Ground Black Pepper to taste
- 2 teaspoons Italian seasoning blend (e.g., Mrs. Dash Tomato, Basil and Garlic Seasoning)
- 2 14.5 ounce cans petite diced tomatoes undrained
- 1 1/2- 2 Quarts good quality Chicken Stock (adjust to desired broth consistency)
- 4 sprigs fresh oregano
- 1 16 ounce package frozen egg noodles
- 1/2 cup fresh basil leaves chopped, plus extra for garnish
- Fresh Parmesan cheese finely grated, for serving
Instructions
- In a large Dutch oven or heavy-bottomed pot, melt the butter over medium heat. Add the cubed chicken breast, chopped onion, and minced garlic. Sauté, stirring occasionally, until the chicken is cooked through and lightly golden, and the onion has softened and turned translucent, about 5-7 minutes.
- Season the chicken mixture with celery seed, Italian seasoning, salt, and freshly ground black pepper to your taste. Stir well to coat the ingredients evenly. Pour in the cans of petite diced tomatoes (do not drain) and the chicken stock.
- Add the fresh oregano sprigs to the pot. Bring the soup to a rolling boil, then reduce the heat to low, cover the pot, and let it simmer gently for 30 minutes to allow the flavors to meld beautifully.
- While the soup is simmering, prepare the frozen egg noodles according to the package directions, typically boiling them in a separate pot of salted water until tender. Drain well. Also, finely chop the fresh basil and grate the Parmesan cheese if not pre-grated.
