Ingredients

  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 1 cup light brown sugar
  • 1 egg
  • 3 ounces bittersweet chocolate (melted)
  • 1 teaspoon vanilla
  • 1 1/2 cups rolled oats
  • 1 cup sweetened flaked coconut

Instructions

  1. Preheat oven to 325 degrees F (160 C) and line baking sheets with parchment paper.
  2. In a stand mixer or with a hand mixer, cream together the shortening and brown sugar until light and fluffy. Add in the egg and vanilla extract, mixing until just combined. Gently fold in the melted bittersweet chocolate.
  3. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined, being careful not to overmix.
  4. Once the flour mixture is incorporated, gently fold in the rolled oats and sweetened flaked coconut using a spatula. Mix until evenly distributed throughout the dough.
  5. Using a cookie scoop (about 1.5 tablespoons), drop rounded spoonfuls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  6. With the back of a fork, gently press down on each cookie in a crisscross pattern to flatten them slightly.
  7. Bake for 12 minutes, or until the edges are lightly golden and the centers are set.
  8. Allow the cookies to cool on the baking sheet for 2-3 minutes before carefully transferring them to a wire rack to cool completely.
  9. Store cooled cookies in an airtight container at room temperature for up to 5 days.
