Chocolate Beet Cake

Ingredients

  • 1 3/4 cups flour
  • 1 1/2 teaspoons baking soda
  • 6 Tablespoons dark chocolate cocoa
  • 1/2 teaspoon espresso powder
  • 1/2 teaspoon salt
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 cup vegetable oil + 2 Tablespoons
  • 1 1/2 cups pureed Paisley Farms Sweet Pickled Beets (about half of a 35.5 ounce jar, drain before pureeing)
  • 2 teaspoons pure vanilla
  • For the Chocolate Ganache:
  • 8 ounces of semi-sweet chocolate (I have used squares and chips)
  • 1/2 cup of cream
  • 1 teaspoon of instant coffee or 1 Tablespoon of rum or whiskey

Instructions

  1. Preheat oven to 350 degrees F (175 C) and spray a 9×13 baking dish with non-stick cooking spray.
  2. Sift together flour, baking soda, cocoa powder, espresso powder, and salt. Set aside.
  3. Puree drained beets until smooth. Set aside.
  4. In the bowl of a stand mixer or with a hand mixer, combine together oil, sugar, and eggs. Beat on medium speed for 2 minutes until light and fluffy.
  5. Add in vanilla and pureed beets. Mix until just incorporated.
  6. Gradually add in dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
  7. Pour the batter into the prepared pan, spreading evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Cool the cake completely in the pan on a wire rack. For best results, cover with plastic wrap and let it sit overnight before adding the chocolate ganache. This allows the flavors to deepen and the cake to set perfectly.
  10. To prepare ganache: In a small saucepan over low heat, add chocolate and cream. Stir constantly until the chocolate is completely melted and the mixture is smooth and glossy. Remove from heat. Stir in the instant coffee or rum/whiskey with a whisk until fully combined.
  11. Pour the warm ganache over the cooled cake, spreading it evenly across the top. Place the cake in the fridge to chill for at least 30 minutes, allowing the ganache to firm up.
  12. We served it cold for an extra firm, rich texture.

Notes

The cake will sit overnight and be ready to eat the next day.
