My Adaptations for These Taco Pork Chops: Customizing for Perfection

While Shelby’s original recipe provides a fantastic foundation, I made a couple of minor adjustments to suit my family’s preferences and the ingredients I had on hand. Firstly, the boneless pork chops I had were significantly thicker than those specified in the original recipe. To achieve that melt-in-your-mouth tenderness that allows you to cut the pork with just a fork, I extended the simmering time considerably. Slow and steady cooking ensures that thicker cuts become incredibly succulent.

Secondly, because I was cooking for a larger family and had eight pork chops instead of the original’s six, I increased the amount of water in the sauce to ensure there was ample liquid for simmering and to achieve a generous amount of sauce. This naturally made the sauce a bit thinner than intended. To reach my desired consistency, I opted to thicken it with a small amount of cornstarch mixed with water. It’s important to note for those following a strict Paleo diet that cornstarch is not Paleo-compliant. If you wish to incorporate my sauce-thickening modification while adhering to Paleo principles, I recommend using Arrowroot Powder as a direct substitute for cornstarch—it works beautifully and keeps the dish Paleo-friendly. I simmered my chops, covered, in the rich sauce for approximately 40 minutes, which resulted in exceptionally tender pork and delightfully soft, sweet onions.

Given that my family isn’t strictly following a Paleo diet, I served our Taco Pork Chops with sweet corn and a side of my beloved Cilantro Lime Rice. The combination was utterly amazing, creating a well-rounded and deeply satisfying meal that quickly earned a spot in our regular rotation.

Understanding the Original: How My Recipe Differs from Shelby’s Paleo Version

It’s crucial to highlight the distinctions between my adapted recipe and Shelby’s original creation in “The One-Pot Paleo Cookbook.” Shelby’s recipe specifically calls for thinner pork chops and typically fewer servings. This allows her version to cook much faster, often being ready from start to finish in just 20 minutes—a true testament to the speed and efficiency of one-pot Paleo cooking. Her original serving suggestions are also entirely Paleo-friendly, often pairing the flavorful pork chops with homemade guacamole made from fresh avocado and a vibrant, Paleo-approved salsa. Ingredients

  • 2 Tablespoons olive oil
  • 8 boneless pork chops
  • 1 8 ounce can Tomato Sauce
  • 2 cups of water divided
  • 1 small onion sliced
  • 1 Tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked pepper
  • 2 Tablespoons cornstarch optional
  • fresh cilantro sprinkled over the top before serving, if desired

Instructions

  • In a large skillet, over medium-high, heat olive oil, and place pork chops in a single layer. Brown well on each side. (about 5 minutes for each side)
  • Whisk together 1 3/4 cup of water, tomato sauce, and dried spices. Add in the sliced onion.
  • Pour tomato/onion sauce over browned pork chops. Cover with a lid and reduce heat to simmer.
  • Simmer covered for about 30-40 minutes, stirring occasionally, until pork chops are tender.
  • If the sauce isn’t desired thickness, mix 1/4 cup of water with 2 Tablespoons of corn starch and add to the sauce to thicken, if necessary.
  • Sprinkle with fresh cilantro before serving, if desired.
