Celebrating Reuben Flavors: More Than Just a Sandwich
March holds a special significance for Reuben enthusiasts everywhere, as it’s recognized as National Reuben Month! This timing is especially convenient, as many often find themselves with a surplus of delicious corned beef following traditional St. Patrick’s Day celebrations. Instead of letting those succulent leftovers go to waste, why not transform them into something spectacular, like this Reuben Egg Casserole? Or, better yet, plan ahead and pick up extra corned beef specifically for this delightful dish. You won’t regret having it on hand!
The versatility of Reuben flavors extends far beyond the classic sandwich. The very Reuben Sandwich, a true icon, was recently highlighted in Nebraska Life Magazine’s March/April 2021 issue. It was truly an honor to see one of my most cherished recipes receive such recognition! My long-standing collaboration with Frank’s Kraut, spanning over six years, has been a journey of culinary creativity. During this time, I’ve shared countless recipes featuring their exceptional sauerkraut, many of which are exciting variations on the traditional Reuben sandwich. This passion led me to coin the term “Reubenizing” recipes, a concept that has truly resonated and stuck within our cooking community.
Embracing the Reuben Spirit: A Culinary Tradition
While National Reuben Month brightens up March, here in Omaha, Nebraska – widely considered the birthplace of the Reuben sandwich – we also enthusiastically celebrate National Reuben Day on March 14th each year. Numerous local bars and restaurants proudly showcase creative takes on this Nebraska original, honoring its rich culinary heritage. But you certainly don’t need to be in Omaha to partake in the festivities! Gather your ingredients, prepare any of these fantastic Reuben recipes, and join in the delicious celebration from wherever you are. “Reubenizing” means taking those unmistakable flavors of corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing and creatively incorporating them into a wide array of dishes. From casseroles and dips to appetizers and even pasta, the possibilities are endless. This breakfast casserole is just one delicious example of how this philosophy can transform a meal.

Essential Ingredients for Your Reuben Brunch Bake
Crafting this delightful Reuben Crescent Bake requires a few key components, each playing a crucial role in delivering that authentic, crave-worthy flavor profile:
- Pillsbury Crescent Rolls: The foundation of our casserole. Opt for the seamless crescent roll dough sheets if available, as they make laying out the crust incredibly easy. Their flaky, buttery texture provides the perfect base.
- Corned Beef: The star of the show. Leftover cooked corned beef, finely shredded or diced, works wonderfully. Its savory, tender quality is irreplaceable.
- Frank’s Kraut: Essential for that signature tangy, briny flavor that defines a Reuben. Ensure it’s well-drained to prevent the casserole from becoming soggy.
- Thousand Island Dressing: The creamy, tangy condiment that ties all the Reuben flavors together. Its sweet and savory notes are a must.
- Swiss Cheese: Melted to perfection, Swiss cheese adds a nutty, creamy richness that complements the other ingredients beautifully.
- Caraway Seeds: A small but mighty ingredient, caraway seeds provide a subtle, aromatic warmth that enhances the kraut and corned beef, echoing the traditional rye bread.
- Eggs: The binding agent that transforms this into a true casserole, creating a custardy texture that holds everything together beautifully.
Effortless Preparation: How to Make Reuben Egg Casserole
One of the best features of this Reuben casserole recipe is its simplicity and speed. Unlike some overnight breakfast casseroles or complex stratas that demand hours of chilling, this dish is designed for immediate gratification. There’s no need to wait eight hours for flavors to meld or dough to rise; simply layer your ingredients and bake! You can have this comforting and flavorful casserole on your table, ready to enjoy, in less than an hour from start to finish. It’s the perfect solution for a last-minute brunch, a quick weeknight dinner, or a savory meal that comes together with minimal fuss.

Step-by-Step Instructions:
- Preheat your oven to 350 degrees Fahrenheit (175°C). Prepare a 9×13-inch baking dish by lightly spraying it with non-stick cooking spray, then set it aside.
- Carefully unroll the crescent roll dough and spread it evenly into the bottom of the prepared baking dish, gently pressing the seams together to form a solid crust.
- Generously spread the Thousand Island dressing over the entire surface of the crescent roll dough.
- Evenly distribute the shredded or diced corned beef over the layer of dressing.

- In a separate bowl, whisk the eggs thoroughly. Incorporate the caraway seeds and black pepper into the beaten eggs, ensuring they are well combined.

- Next, spread the well-drained sauerkraut over the corned beef layer. Pour the seasoned beaten eggs evenly over the sauerkraut.
- Finally, sprinkle the shredded Swiss cheese generously over the top of the egg mixture.
- Bake the casserole for approximately 30 minutes, or until the eggs are set, the cheese is bubbly and golden, and the crescent roll crust is beautifully browned.
- Once baked, remove the casserole from the oven and let it rest for about 10 minutes before cutting into servings. This allows the casserole to set further, making it easier to slice and serve.
- For an optional touch of freshness and color, garnish with fresh chopped parsley before serving.

Storage Tips: Any leftover Reuben Breakfast Casserole can be stored in an airtight container in the refrigerator for up to 3 days. Simply reheat in the microwave or oven until warmed through.
