For a perfectly smooth sauce, use a stick blender to blend until creamy, or transfer to a regular blender and process until smooth.
  2. Prepare your wings: Thoroughly wash the chicken wings and drumettes, then pat them completely dry with paper towels (this is key for crispy skin!).
