- 2 cups flour
- 1/2 cup cocoa powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 3/4 cup vegetable oil
- 1 1/2 cups sugar
- 2 teaspoons vanilla extract
- 1 1/2 cups finely shredded zucchini (do NOT wring out moisture)
For the Frosting
- 1/4 cup (1/2 stick) salted butter, melted
- 3 heaping Tablespoons cocoa powder
- 2 cups powdered sugar
- 1 Tablespoon vanilla extract
- 1/4 cup milk
Instructions
- To make the brownies: Preheat your oven to 350 degrees F (175 C). Line the bottom and sides of a 9×13 baking dish with heavy-duty foil, leaving an overhang on the sides to create handles. Spray the foil generously with non-stick cooking spray.
- Shred the zucchini finely using a box grater or food processor. Set aside; do not wring out the moisture.
- In a separate medium bowl, sift together the flour, cocoa powder, baking soda, and salt. Whisk until well combined. Set aside.
