  • Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  • In a spacious mixing bowl, combine the diced apples, dried tart cherries, quick oats, slivered almonds, pepitas, ground cinnamon, and salt. Stir well to ensure all the dry ingredients are evenly distributed.
  • In a small saucepan, over medium heat, gently warm the brown sugar, honey, vanilla extract, and olive oil.
