Pecan Caramel Bark – A Decadent Turtle Bark Recipe

Indulge in Decadent Homemade Pecan Caramel Bark – Your Ultimate Holiday Treat!

The world of baking is full of delightful challenges, and sometimes, stepping out of your comfort zone leads to the most rewarding culinary triumphs. That’s precisely what happened when I decided to join a weekly bake-along challenge, an experience that not only expanded my baking repertoire but also introduced me to the sheer joy of creating a classic sweet treat: Pecan Caramel Bark, affectionately known as Turtle Bark.

My journey began with an invitation from Danielle, the wonderful host over at Hugs & Cookies XOXO, who organizes these fantastic baking events. I’d been having such a blast experimenting in my kitchen, and the idea of tackling something I wouldn’t typically bake really appealed to me. Little did I know, the very first challenge would put me face-to-face with two ingredients that always seemed a bit daunting: pecans and homemade caramel.

To be frank, I’d never been a huge fan of pecans. And the thought of making caramel from scratch? It always felt like a daunting task, a delicate dance between sugar, water, and heat that often ended in a burnt, sticky mess in my imagination. The intimidation was real! Danielle, being the absolute sweetheart she is, offered a “cheater” version using store-bought melted caramels. For a moment, I seriously considered taking the easy route. It felt like a tempting shortcut to deliciousness without the perceived risk.

But then, a different impulse took over. I tightened my apron straps, metaphorically pulled up my “big girl panties,” and decided to tackle it head-on. I told myself that I had enough ingredients for a few attempts, fully prepared for a couple of do-overs. It’s always good to have a backup plan, especially when venturing into new culinary territory.

And guess what? Against all my initial hesitations and self-doubts, I did it. On the very first try!

(A triumphant bow is definitely in order!)

It was surprisingly easy, proving that sometimes the biggest hurdles are merely in our minds. The process, while requiring attention, was far from the complex science experiment I had envisioned. Today, I proudly made this Pecan Turtle Bark with homemade caramel, and the results were simply sensational. The aroma filling my kitchen was intoxicating, the visual appeal of the dark chocolate, golden caramel, and toasted pecans was stunning, and the taste? Absolutely amazing!

A huge thank you to Danielle for the fun and challenging “homework!” It’s moments like these that make baking so incredibly rewarding. For all of you who are looking for a delightful assignment that tastes even better than it sounds, here is the recipe. Prepare to impress yourself and everyone around you with this incredibly decadent Pecan Caramel Bark.

Ingredients

  • ½ cup pecans (toasted and chopped)
  • 16 oz Ghirardelli DARK chocolate chips
  • For the Caramel Filling:
  • ½ cup granulated sugar
  • 2 tablespoons water
  • 1 tablespoon unsalted butter
  • 5 tablespoons heavy cream
  • *Optional Topping:
  • 2 tablespoons pecans (finely chopped)
  • 2 oz caramel sauce (for drizzling, if desired)

Instructions

Toasting the pecans:

  1. Preheat your oven to 375°F (190°C). Spread the pecans evenly on a baking sheet. Toast for about 5-6 minutes, then give them a good stir to ensure even toasting. Continue baking for another 5-6 minutes, or until the nuts deepen in color and release a wonderfully aromatic fragrance. Keep a close eye on them to prevent burning, as nuts can go from perfectly toasted to burnt very quickly. Remove the baking sheet from the oven and set aside to cool completely. Once the pecans are entirely cool, chop them into desired pieces. Reserve about 2 tablespoons of these chopped pecans and chop them even finer for a delicate topping; set these aside.

To make the caramel filling:

  1. In a medium saucepan, combine the granulated sugar and water. Place the saucepan over medium-low heat and stir constantly until the sugar has fully dissolved. Use a wet pastry brush to gently remove any sugar crystals that form on the sides of the pan; this prevents crystallization later on. Once the sugar is dissolved and the mixture is clear, increase the heat to high. From this point, avoid stirring the mixture directly with a spoon. Instead, now and then, gently swirl the pot by its handle to keep the sugar moving and ensure even cooking. The mixture will begin to bubble rapidly after about a minute. Continue cooking until the syrup darkens to a beautiful medium amber color, which typically takes about 5-7 minutes.
  2. Carefully add the butter and heavy cream to the saucepan. Be prepared for the mixture to bubble up quite wildly at this stage as the colder ingredients react with the hot sugar. Whisk vigorously to combine all the ingredients until smooth. The intense bubbling will subside as the caramel cools slightly.
  3. Remove the caramel from the heat and set it aside to cool completely to room temperature. This cooling process is crucial for the caramel to thicken to the right consistency for your bark.

To melt the chocolate:

  1. Prepare a double boiler by placing a heat-proof bowl over a saucepan of simmering water, ensuring the bottom of the bowl does not touch the water. Add the Ghirardelli dark chocolate chips to the bowl. Stir occasionally until the chocolate is completely melted and smooth. Be careful not to let any water get into the chocolate, as this can cause it to seize. Once melted, remove the bowl from the heat.

Preparation:

  1. Line an 8×8 inch baking pan with parchment paper or wax paper, allowing some overhang on the sides. This will make it much easier to lift the bark out once it’s set.

To assemble the Pecan Caramel Bark:

  1. Pour approximately half of the melted dark chocolate into the prepared 8×8 inch pan. Using an offset icing spatula, smooth the chocolate evenly across the bottom of the pan to create a uniform layer. Place the pan in the refrigerator for about 5 minutes to allow the chocolate to set slightly, becoming firm enough to support the next layer.
  2. Remove the pan from the refrigerator. Pour about one-quarter of the cooled homemade caramel filling evenly over the slightly hardened chocolate layer. Immediately sprinkle the majority of your chopped toasted pecans over the caramel. Gently press the pecans down into the caramel layer with your hand or the back of a spoon to ensure they adhere well. Return the pan to the refrigerator for another 7 minutes to allow the caramel layer to firm up slightly.
  3. Finally, pour the remaining melted chocolate over the pecan and caramel layer, spreading it gently to cover completely. If using the optional topping, you can drizzle the 2 oz of caramel sauce over this top chocolate layer and sprinkle the finely chopped pecans on top for an extra flourish. Return the pan to the refrigerator for at least 20 minutes, or until the entire bark is fully set and firm.
  4. Once completely set, lift the bark out of the pan using the parchment paper overhang. Place it on a cutting board and break or cut it into irregular pieces of your desired size. Serve and enjoy!

Tips for Success and Variations

Making homemade caramel can seem intimidating, but with a few pointers, you’ll master it. Firstly, ensure your saucepan is clean, as any impurities can cause crystallization. Secondly, do not stir the sugar once it starts to boil; swirling the pan is key. If you’re nervous, a candy thermometer can be your best friend, helping you achieve that perfect amber color without guesswork. Aim for about 320-340°F (160-170°C) for a rich, golden caramel before adding butter and cream.

For the chocolate, always use good quality chips or baking bars, as this forms the base of your bark and significantly impacts the final taste and texture. Ghirardelli is a fantastic choice for its smooth melt and rich flavor.

Don’t rush the chilling times. Each cooling step is crucial for the layers to set properly, ensuring your bark comes out with distinct, beautiful layers that break cleanly. Patience is a virtue in bark making!

Feel free to experiment with variations! You can swap dark chocolate for milk chocolate for a sweeter profile, or even white chocolate for a different aesthetic. Walnuts or almonds can be used in place of pecans if preferred. A sprinkle of flaky sea salt over the top layer of chocolate before it sets can enhance the flavors and add a gourmet touch, creating a delightful sweet and salty contrast.
