For those who have followed my culinary journey for a while, you know my deep-seated affection for the iconic Reuben sandwich. It’s more than just a sandwich; it’s a flavor profile I’ve dedicated myself to mastering, lovingly “reubenizing” nearly every recipe imaginable. From pizzas to baked potatoes, the distinct combination of corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing has found its way into countless creative dishes in my kitchen. Yet, incredibly, I haven’t shared a dedicated Reuben Pasta Salad recipe until now! Friends, I genuinely apologize for this oversight. I promise, with just one bite of this incredibly flavorful salad, you’ll wonder how you ever lived without it. It’s truly a game-changer for anyone who adores the classic Reuben, offering all those beloved flavors in a refreshing and communal format.

Reuben Pasta Salad: The Ultimate Summer Side

As the days grow longer and the sun shines brighter, the calendar inevitably brings us to Memorial Day weekend, marking the unofficial start of summer. This year, like every year, time seems to fly by, and suddenly we’re planning gatherings with cherished family and friends. For many, including my family, this means firing up the grill. While my husband and boys usually take charge of the grilling—mastering everything from juicy burgers and classic hot dogs to savory brats—my domain lies in orchestrating the perfect supporting cast: the side dishes and delectable desserts. I appreciate the crisp freshness of raw vegetable salads and the comforting warmth of grandma’s baked beans, but there’s an undeniable charm and comforting familiarity that a generously sized bowl of creamy pasta salad brings to any outdoor feast. It’s the ultimate crowd-pleaser, versatile enough to complement grilled meats or stand proudly on its own.

This delightful recipe is proudly sponsored by Frank’s Kraut. My unwavering love for their exceptional sauerkraut and all opinions expressed here are, as always, entirely my own.

Crafting Your Easy Reuben Pasta Salad

When I was brainstorming ideas for my annual Frank’s Kraut kick-off to grilling season, my mind buzzed with possibilities. Should sauerkraut take center stage in a main course? Or would it be better showcased as a vibrant side dish? Perhaps even a surprising dessert? (Yes, you read that right! If you haven’t yet indulged in my Sauerkraut Chocolate Cake, you’re truly missing out on a unique and delicious experience!) My previous collaboration with Frank’s Kraut resulted in those wildly popular Bratwurst Sliders, which were an instant hit. So, this time, I decided it was the perfect opportunity to spotlight sauerkraut in a fantastic side dish. And what could be more perfect than combining tender pasta noodles with all the beloved components of a classic Reuben sandwich? This pasta salad perfectly captures that iconic flavor profile, offering a refreshing and hearty dish that’s ideal for any gathering. Beyond this creamy delight, if you’re keen on exploring more “Reubenized” creations, I highly recommend my Reuben Pizza and these satisfying Reuben Stuffed Baked Potatoes. Each recipe celebrates the rich, savory, and tangy essence of the Reuben in exciting new forms.

Frank’s Kraut: A Family Tradition

When summer graces us with its warmth, my refrigerator is consistently stocked with Frank’s Kraut. It’s an essential staple, whether we’re firing up the grill for an energetic backyard cookout or meticulously packing a picnic basket for a leisurely family outing. That distinct, tangy bite of sauerkraut is simply indispensable, transforming ordinary hot dogs, brats, and even everyday sandwiches into something truly special. For me, Frank’s Kraut isn’t just an ingredient; it’s a taste of home, deeply woven into my life for as long as I can recall. Its presence is linked to cherished family recipes and traditions, echoing my rich Polish and German heritage. What began as a must-have on our holiday table has beautifully evolved into a year-round favorite. Now, after a decade of a wonderful partnership with Frank’s Kraut, I continue to discover innovative and delicious ways to share my passion for sauerkraut with all of you. It’s been a truly fulfilling journey filled with countless recipes, enduring traditions, and heartwarming stories, all stemming from that single, versatile jar.

Exploring Frank’s Kraut Varieties

While Frank’s original kraut remains, hands down, the absolute best sauerkraut – the one I grew up with and instinctively reach for even today – Frank’s Kraut’s offerings extend beyond the classic. They champion creativity in their range, providing a variety of flavors to suit every palate and dish. Their zesty Mustard Kraut, for example, would introduce a fantastic, vibrant twist to this very Reuben Pasta Salad, lending an extra layer of complexity. The robust Smoky BBQ Kraut is an ideal companion for any grilled delicacy, infusing a deep, smoky undertone. And then there’s the Sweet Bavarian Kraut, with its mellow and subtly sweet flavor profile, which pairs exquisitely with sausages or pork dishes. From the bold and tangy to the sweet and smoky, Frank’s provides an impressive spectrum of kraut varieties, making it effortless to diversify your meals. No matter the season, the occasion, or the culinary creation you have in mind, there’s a perfect kraut waiting to enhance it.

Key Ingredients for an Unforgettable Reuben Pasta Salad

Creating this Reuben Pasta Salad is straightforward, relying on fresh, quality ingredients that truly sing. For a complete list of ingredients and detailed instructions, please refer to the full printable recipe card below. But first, let’s explore the stars of this culinary show:

Ingredients for Homemade Thousand Island Dressing

Homemade Thousand Island Dressing Ingredients:

The heart of any Reuben is its dressing, and a homemade Thousand Island is simply unparalleled. You’ll need:

  • Mayonnaise: The creamy base that binds all the flavors together.
  • Chili Sauce & Ketchup: These provide the iconic tang, sweetness, and hint of spice.
  • Minced Onion, Garlic, Salt & Pepper: Essential aromatics and seasonings to deepen the flavor profile.
  • Finely Chopped Hard-Boiled Egg: Adds a subtle richness and classic texture to the dressing.

To Make the Salad:

Here’s what you’ll gather for the main event:

  • Pasta: I personally prefer medium shells for this recipe because their clever little pockets are perfect for catching and holding all that delicious dressing and tiny bits of ingredients. However, feel free to use your favorite pasta shape like elbow macaroni, bow tie (farfalle), rotini, or penne; they all work wonderfully.
  • Sauerkraut: This is a non-negotiable! In my home, it’s always Frank’s Kraut, a tradition spanning decades. Remember to drain it thoroughly to avoid a watery salad.
  • Corned Beef: This is where the hearty, savory notes come in. It’s an excellent way to use up leftover corned beef from a holiday meal. Alternatively, ask your deli counter to slice the corned beef a bit thicker than usual, then cube it into bite-sized pieces.
  • Swiss Cheese: The nutty, slightly sweet flavor of Swiss cheese is indispensable in a Reuben. I opt for thick slices cut into cubes, but shredded Swiss cheese is also a fantastic and equally delicious alternative.
  • Caraway Seeds (optional): While entirely optional, these small seeds pack a punch of nutty, peppery flavor that truly mimics the rye bread typically found in a classic Reuben sandwich. They add an authentic touch that many enthusiasts appreciate.
  • Fresh Parsley (optional): A sprinkle of fresh, chopped parsley not only adds a lovely pop of vibrant green color but also introduces a fresh, herbaceous note that brightens the entire salad.

Effortless Preparation: How to Make Reuben Pasta Salad with Homemade Thousand Island Dressing

You’ll be delighted by how quickly this incredible Reuben macaroni salad comes together, making it perfect for last-minute contributions to potlucks or speedy weeknight meals.

Making Homemade Thousand Island Dressing

Step 1: Prepare the Homemade Thousand Island Dressing

The first crucial step is preparing your rich and creamy Homemade Thousand Island Dressing. Simply combine all the listed dressing ingredients in a bowl. Once thoroughly mixed, cover the bowl and refrigerate it. I highly recommend making the dressing in the morning or even the day before you plan to serve the salad. This allows all those wonderful flavors ample time to meld and deepen, resulting in a more complex and satisfying dressing.

Step 2: Cook the Pasta and Assemble the Salad

Next, cook your chosen pasta in a pot of generously salted boiling water until it reaches the perfect al dente stage. This means it should be tender but still have a slight bite. Be careful not to overcook the pasta, as mushy noodles can ruin the texture of any pasta salad. Once cooked, drain the pasta and rinse it thoroughly under cold water to stop the cooking process and cool it down. This prevents the pasta from sticking together and ensures your salad remains refreshing. Transfer the cooled pasta to a large salad bowl.

Now for the exciting part – assembly! To the pasta, add your cubed corned beef, the drained Frank’s Kraut, and the Swiss cheese (whether cubed or shredded). Pour in about half of your prepared Thousand Island dressing and begin to stir gently, ensuring everything is well combined. Continue adding more dressing, a little at a time, until you achieve your desired creaminess. You might find you have a bit of dressing leftover; simply store it in an airtight container in the fridge for up to three days, perfect for another salad or dipping. For that authentic Reuben touch, sprinkle with caraway seeds and fresh parsley if you wish, then mix them in. The salad can be served immediately for a fresh taste, or, for even deeper flavor development, refrigerate it for a few hours until ready to eat. Any leftovers can be stored in the fridge for up to three days. Freezing this salad is not recommended, as it can alter the texture of the pasta and dairy components.

Customization and Expert Tips for Your Sauerkraut Pasta Salad

One of the joys of cooking is the freedom to get creative! This sauerkraut pasta salad recipe is incredibly versatile, allowing for fun and delicious customizations to suit your preferences. Here are some ideas to make it uniquely yours and ensure a perfect outcome every time:

  • Meat Alternatives: While corned beef is classic, feel free to experiment. Pastrami makes an excellent substitute, offering a similar rich, savory profile. If you’re a fan of the “Rachel” sandwich (a turkey Reuben), swap the corned beef for thinly sliced turkey for a lighter, yet equally flavorful, twist.
  • Dressing Variations: My homemade Thousand Island dressing is a star, but if your heart truly belongs to Russian dressing on a Reuben, go for it! The slightly spicier, horseradish-infused notes of Russian dressing can add a different dimension to this salad.
  • Add More Tang: For an extra burst of vibrant tang and crunch, consider finely dicing some dill pickles and mixing them directly into the salad. They complement the sauerkraut beautifully.
  • Crunch Factor: To add a delightful textural contrast and an extra nod to the Reuben sandwich, make some Homemade Rye Croutons. Their crispiness and rye flavor would be an outstanding addition.
  • Dressing Control: Always add the dressing gradually. Start with about half the recommended amount, then stir and taste. Continue adding small increments until you achieve your desired level of creaminess and flavor. This prevents an overly dressed or soggy salad.
  • Perfect Pasta Texture: The cardinal rule for any pasta salad is to cook your noodles al dente. This ensures the pasta holds its shape and provides a pleasant bite. Overcooked pasta will lead to a mushy, unappetizing salad texture, especially after refrigeration. Rinse thoroughly with cold water to halt the cooking process and cool the pasta quickly.

Ingredients

For the Homemade Thousand Island Dressing:

  • 1/2 clove garlic minced
  • 1/4 teaspoon kosher salt
  • 3/4 cup mayonnaise
  • 1/4 cup chili sauce
  • 2 Tablespoons ketchup
  • 1 1/2 Tablespoons dried minced onion
  • 2 teaspoons sweet pickle relish
  • 1/2 hard boiled egg finely chopped
  • fresh cracked black pepper, to taste

For the Salad:

  • 1 16-ounce box of pasta noodles cooked al dente

  • 6 ounces Swiss cheese cubed or shredded
  • 1 1/2 cup corned beef cubed

Instructions

Prepare the Homemade Thousand Island Dressing:

  1. Make the Homemade Thousand Island Dressing by mixing all of the ingredients in a bowl. Cover and refrigerate until ready to use. I like to make it in the morning, so the flavors have time to mingle.

Make the Pasta Salad:

  1. Cook pasta in salted boiling water until al dente. Don’t overcook your pasta or the salad will be mushy. Rinse in cold water and place in the salad bowl.
  2. Top with cubed corned beef, Frank’s Kraut and Swiss cheese. Add in your dressing, stirring to combine. Add in about half, then continue adding in until you achieve the amount you want.
  3. Sprinkle with caraway seeds and fresh parsley if desired. Mix in. Serve immediately, or refrigerate until ready to eat.

Notes

Depending on how much dressing you prefer, you may have a bit leftover. Just store it in the fridge in an air-tight container for up 3 days. It’s great on a lettuce salad or use it for dipping.
Store leftover salad in the fridge for up to 3 days. I do not recommend freezing this salad.
