Ingredients

  • One Pound Baby Bella Mushrooms
    washed well, stems removed and centers hollowed (about 30 mushrooms)
  • 6

    Simply Surimi Seafood

    sweet onion

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place about 1 Tablespoon of butter in a cast iron skillet over medium heat to melt. Add in chopped bell peppers and sweet onion and sauté for about 5 minutes until softened. Add in minced garlic and the chopped mushroom stems/middles and continue to sauté for another 5 minutes more, or until onions are translucent and mushrooms are tender. Add in the Simply Surimi Seafood, sprinkle with Old Bay Seasoning, and season with salt and pepper to taste. Stir until heated through. Remove from heat.
  • Stir in the seasoned breadcrumbs and shredded smoked Gouda cheese until well combined. Transfer the stuffing from the pan to a bowl. Quickly wipe down the skillet with a paper towel; you will reuse it for baking.
  • Arrange the hollowed-out mushroom caps in the skillet. Generously stuff each mushroom with the prepared filling, gently pressing it down and creating a small mound on top. Divide the remaining butter into little bits and scatter them evenly around the pan and on top of the stuffed mushrooms.
