Ingredients
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg plus more for topping
- 1/2 teaspoon ground cinnamon
- 3/4 cup Horizon Organic unsalted butter at room temperature
- 1/2 cup granulated sugar
- 1/2 cup packed light-brown sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 teaspoon rum extract
- 1/2 cup Silk Nog
To make the frosting:
- 1/2 cup Horizon Organic Butter at room temperature (I used 1/4 cup salted and 1/4 cup unsalted butter)
- 3 – 5 Tablespoons Silk Nog
- 1/2 teaspoon rum extract
- 3 cups powdered sugar
Instructions
- Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, whisk together the flour, baking powder, salt, ground nutmeg, and ground cinnamon; set aside. Using the paddle attachment of your stand mixer (or a hand mixer), whip together the room temperature butter, granulated sugar, and light-brown sugar until the mixture is pale and fluffy, typically 2-3 minutes. Mix in the egg yolks one at a time, blending just until combined after each addition. Stir in the vanilla extract, rum extract, and Silk Nog until well incorporated. With the mixer set on low speed, slowly add the dry ingredients to the wet mixture and mix just until combined. Be careful not to overmix the dough. Scoop dough out by heaping tablespoonfuls and drop onto parchment paper-lined baking sheets, spacing cookies about 2 inches apart. Bake in the preheated oven for 11-13 minutes, or until the edges are lightly golden and the centers are still soft.
