Ingredients

  • Crust:
  • 2 Cups graham cracker crumbs
  • 6 Tablespoons butter, melted
  • 1/4 cup sugar
  • dash of salt
  • 1/2 teaspoon cinnamon
  • 2 Tablespoons water
  • Filling:
  • 2 cups heavy whipping cream
  • 3 Tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 – 3.4 oz box of instant vanilla pudding
  • 1 cup milk
  • 8 ozs cream cheese, softened
  • 1 – 14 oz can sweetened condensed milk
  • 4 bananas, divided
  • 1/2 cup coconut, toasted

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). You can use a food processor to crumble your crackers (approximately 14 crackers for 2 cups). For convenience, store-bought graham cracker crumbs work perfectly!
  2. In a medium bowl, combine the graham cracker crumbs with salt, sugar, and cinnamon. Mix well with a fork. Add the melted butter and water, then continue to combine until the crumbs are thoroughly blended and moist.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch deep pie pan, creating an even layer.
  4. Bake the crust for 10 minutes, then remove from oven and set aside to cool completely.
  5. For the filling, in a separate bowl, whisk together the instant vanilla pudding mix and cold milk until well combined and slightly thickened. Set aside.
