Mastering Southern Comfort: Unveiling the Skillet Red Beans & Rice from Deep South Dish
There’s an undeniable joy in discovering a cookbook that truly speaks to your soul, especially when it ignites a passion in others around you. For me, that joy arrived recently with my cherished new copy of Deep South Dish. What makes this culinary treasure even more special is the unprecedented enthusiasm it sparked in my husband, who, to my knowledge, has never before picked up a cookbook and devoured it from cover to cover. His excitement, arguably, rivaled my own! From the moment it landed on our kitchen counter, I found myself furiously scribbling down an ever-growing list of “must-make” recipes. The last two nights have been a testament to its charm, as I’ve cooked directly from its pages, each dish proving more incredible than the last. The decision of which recipe to share first was a delightful dilemma, but ultimately, one recipe stood out, demanding immediate attention: the utterly magnificent Skillet Red Beans & Rice, a quintessential Southern comfort food.
From Boxed Convenience to Authentic Southern Flavor
Red Beans & Rice has long been a cherished comfort food in our household, a go-to order whenever we dine out, and a convenient staple at home – albeit, in my “Yankee” past, often from a box. While those pre-packaged versions sufficed in their own right, they simply cannot compare to the profound depth of flavor and soul-satisfying warmth of a truly homemade rendition. And now, having experienced the real deal, there’s no turning back. The memory of my husband’s genuine smile, radiating pure contentment as he savored this skillet creation, is etched vividly in my mind. He literally became the skillet’s guardian, lovingly stirring it, and (not-so) patiently awaiting its readiness. The minutes felt like hours to him, I’m certain, but every moment was 100% worth the wait. This dish isn’t just food; it’s an experience, a journey into the heart of Southern hospitality, right from our own kitchen.
The enduring allure of Southern cuisine lies in its rich history and the ingenious way it transforms simple ingredients into extraordinary meals. Red Beans & Rice, in particular, holds a special place in the culinary landscape of Louisiana, traditionally served as a Monday meal, making clever use of leftover ham bones from Sunday dinner. This dish beautifully embodies the essence of hearty, economical cooking that feeds both body and soul, connecting diners to generations of tradition. Learning to prepare it authentically from a trusted source like Mary Foreman’s Deep South Dish cookbook has elevated our home cooking beyond mere sustenance to a true celebration of flavor, heritage, and the comforting spirit of the South.

Skillet Red Beans & Rice
Ingredients
*(Recipe from the Deep South Dish cookbook; my pantry adjustments in parenthesis)*
- 1 Tablespoon butter or oil (I opted for Olive Oil)
- 1/2 pound Smoked Andouille Sausage (a 14-ounce package works perfectly)
- 1 slice bacon chopped (Alternatively, 1/3 cup Real bacon pieces can be used for convenience)
- 1 cup chopped onion (I prefer green onions for this dish)
- 1/2 cup green or red bell pepper or a combination of both chopped
- 1/4 cup celery chopped (A great substitute is 1 teaspoon celery seed)
- 1 Tablespoon minced garlic
- 2 cups chicken stock
- 1/2 teaspoon Italian Seasoning
- 1/4-1/2 teaspoon Cajun Seasoning (Tony Chachere’s is highly recommended for authentic flavor)
- 1/4 teaspoon black pepper
- 1 large bay leaf
- 2 15.5 oz cans Red Kidney Beans (Using one dark and one light red variety, drained and rinsed, adds visual appeal and subtle flavor variation)
- 2 cups instant rice (Leftover Basmati rice can be a delightful substitute, adding its own unique aroma and texture)
Instructions
- Prepare Your Ingredients: Ensure all your ingredients are prepped and measured, as this dish comes together quite quickly once cooking begins! Heat your choice of oil or butter in a large, lidded skillet over medium-high heat. Add the smoked Andouille sausage and bacon, cooking until they are lightly browned and fragrant, which typically takes about 4 minutes.
- Sauté the Aromatics: Introduce the chopped onion, bell pepper, and celery to the skillet. Continue to cook and stir the mixture until the vegetables have softened and become tender, a process that usually takes around 5 minutes.
- Infuse with Flavor: Add the minced garlic to the skillet, stirring for another couple of minutes until it releases its aromatic scent. Pour in the chicken broth, then stir in the Italian seasoning, Cajun seasoning, black pepper, and bay leaf. Bring this flavorful mixture to a gentle boil.
- Combine and Simmer: Finally, add the drained and rinsed red kidney beans and the instant rice to the skillet. Stir everything together gently to combine. Reduce the heat to medium-low, cover the skillet, and allow it to simmer until the rice is fully cooked and has absorbed the liquid, which should take approximately 10-15 minutes. Once done, remove the bay leaf and serve this comforting dish immediately, perhaps garnished with fresh parsley or green onions for an extra touch of color and flavor.
