If you’re feeling particularly ambitious, or perhaps possessed by a supernatural baking spirit, feel free to go the extra mile! Once rolled, use your ghost-shaped cookie cutters to cut out your eerie little spirits. For best results, try to get as many cutouts as possible from each crust to minimize waste, re-rolling scraps if necessary.

While not strictly necessary, lining your baking sheet with Halloween-inspired parchment paper can add an extra layer of festive fun. Does it make them taste better? Ingredients

  • 1 package 2 crusts refrigerated pie crust (or your own homemade)
  • 1 egg white + 1 Tablespoon water
  • Cherry jam or other red jam, raspberry, strawberry
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 Tablespoons milk
  • black decorator icing for eyes and mouth

Instructions

  • Preheat oven to 375 degrees F (190°C). Line a cookie sheet with parchment paper.
  • Prepare an egg wash by whisking the egg white and water together in a small bowl.
  • Unroll pie crusts onto a lightly floured surface. Roll them out slightly thinner, to about 1/6 inch thick. Use ghost cookie cutters (or other Halloween shapes) to cut out shapes. Place half of the cutouts onto the prepared cookie sheet.
  • Place about 1 teaspoon of cherry jam in the center of each ghost cutout on the baking sheet, being careful to keep it away from the edges. Brush the edges of these cutouts with the egg wash.
  • Brush one side of another ghost cutout with egg wash. Place this egg-washed side down on top of a jam-filled cutout, creating a sandwich. Using the tines of a fork, press firmly around the edges to seal the two crusts together and keep the filling in.
  • Lightly brush the tops of each assembled pop tart with egg wash.
  • Bake for 15 minutes, or until the tops are a light golden brown and the crust is flaky. Remove from oven and transfer to a wire rack to cool completely before glazing.
  • To make the glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and the desired consistency is reached. For a glaze that sets quicker, you can microwave it for 10-20 seconds before applying.
  • Decorate: Once the pop tarts are cooled and glazed, use the black decorator icing to draw eyes and mouths on your ghost shapes. A small decorator tip will provide precision, and a toothpick can be used to refine details or adjust the icing as desired.
  • After the icing has set, serve your adorable Ghostly Pop Tarts. Store any leftovers in an airtight container at room temperature for up to 4 days.

Notes

My cookie cutters measured 2″x3″ (approximately 5cm x 7.5cm), so the total yield and the amount of jam needed for the filling can vary based on the size and shape of your cookie cutter. Adjust accordingly to ensure an even distribution of jam and to prevent overfilling.
