It’s packed with every element we cherish from a classic lasagna: savory pasta, a rich Italian tomato-flavored broth, hearty ground beef, and plenty of gooey cheese. What’s not to love about a simplified version of your favorite Italian dish?
Lasagna Soup: A Comfort Food for All Seasons

The Charm of Simplified Lasagna
When I prepare traditional lasagna, I often find myself with a few broken noodles or a couple of extra sheets that didn’t quite fit the pan. Instead of discarding them, I tuck them into a Ziploc bag, adding to the collection over time. This little trick ensures I’m always ready when a craving for Lasagna Soup strikes! It’s an ingenious way to utilize those leftover lasagna noodles and ensure nothing goes to waste.
Another fantastic aspect of this soup is that you likely already have most of the ingredients in your pantry. A jar of your favorite spaghetti sauce, a couple of cans of diced tomatoes, bouillon, and a selection of common Italian spices are typically all you need. This makes it a go-to recipe for those days when you want something delicious and homemade but haven’t had time for a grocery run.
It truly doesn’t get much simpler. Just combine everything in a soup pot or your slow cooker, and within a short time, you’ll have a delightful dinner ready to serve! The minimal effort belies the incredible depth of flavor you’ll achieve, making it a truly rewarding dish to prepare.

It’s fantastic all on its own, providing a complete and satisfying meal.

Or, elevate it further by topping it generously with creamy ricotta and shredded mozzarella cheese for that iconic lasagna finish.

I’ve been making this recipe for years, and it never fails to impress. The initial inspiration came from my wonderful friend Candi, a fellow food blogger behind The Devilish Dish. While I’ve tweaked it a bit to suit my own preferences – that’s just how I cook! – every recipe Candi shares is guaranteed to be awesome. She is truly an amazing cook, and her culinary talent shines through.
Customizing Your Lasagna Soup: Beyond Traditional Noodles
Absolutely! Not having specific lasagna noodles on hand should never stop you from enjoying this fantastic Italian soup! This recipe is incredibly adaptable, welcoming various pasta shapes. We particularly love it with rotini noodles, but I’ve also made it successfully with ziti or penne. The key is to choose a pasta that can stand up to the rich broth and soak up all those delicious flavors. Feel free to experiment with what you have in your pantry; elbow macaroni, cavatappi, or even small shells would also work wonderfully. Just remember to adjust cooking times as needed, as thinner or smaller pasta shapes will cook faster than traditional lasagna noodles.
That’s one of the best aspects of this Lasagna Soup recipe – its remarkable versatility. I typically use a convenient jarred marinara spaghetti sauce, which keeps the preparation quick and simple. However, if you prefer a spicier kick, opt for a sauce with a bit more heat. Or, for a truly homemade touch, consider using your own homemade sauce! The beauty of this recipe lies in its flexibility, allowing you to tailor it to your exact taste preferences.
For a lighter or vegetarian option, you can easily go meatless by incorporating a generous amount of fresh or frozen vegetables instead of ground beef. Zucchini, carrots, bell peppers, mushrooms, and spinach all integrate beautifully, adding vibrant colors, textures, and nutrients to the soup. Sauté them with the onion and garlic before adding the liquids to build a flavorful base. This ensures that Lasagna Soup can be enjoyed by everyone, regardless of dietary preferences.
